Food of the Fifties with Ruth Chier Rosen

Date Nut Meringue Cookies

This recipe is from my first printing of Tooth Sweet, originally published in 1955. It's my Father's Day special: Date Nut Meringue Cookies. My children voted it perfect for Father's Day (hence the "Father's Day" logo on the lower right-hand side of the recipe card), since it was my husband's favorite. Actually, this recipe need not be confined to Father's DayMother's Day, Valentines Day, Christmas and other festive tables would welcome this treat, and it's super easy to make.
• 2 egg whites, beaten
• 1/2 C powdered sugar
• 1 c dates
• 1 c nuts
• 1 c coconut
• 1 t vanilla

Beat egg whites well and add rest of ingredients. Roll in balls and reroll in coconut. Bake 15 minutes in 375  oven. Makes 60 cookies.
